One year ago this month I took a plunge and decided to do WHOLE30. It forever changed the ways I think about food (along with several food documentaries... thank you Netflix...) I am a huge fan of #jerf "JUST EAT REAL FOOD" and have loved all I have learned about cooking, food prep, and nutrition in this year.
Today, I am on day 7 of my 2nd time doing WHOLE30- 30 days of clean (paleo-ish) eating. You can read about the program rules HERE. I LOVE doing this program. I will tell you that this second time around IS WAY easier than the first time! I only had a teeny-tiny slight headache on day 4 but other than that the first week hasn't been bad "detoxing" from what I had been eating before... but the first time I did it - I definitely had my share of coke zeros and fried chicken etc. before starting (which makes the detox effects worse!) So if you are looking for something to help kick-start you into a healthy lifestyle this is a great program.
My goal for this WHOLE30 round 2 is wanting to 're-set' after my vacation indulgences as well as working out 3-5 times a week while I am doing it to see if my results are amplified. I have already worked out 4 times (lifting, heavy lifting, HIIT and cardio inter-mixed) and I have been feeling AWESOME! So I am curious to see if I will be more toned and lean by day 30. #liftweights
Okay okay.. onto this awesome recipe that is a variation from this one: which has no fruit!
AVOCADO CHICKEN SALAD (whole30, gluten free, mayo free, paleo)
2 CHICKEN BREASTS (Cooked over night in the crock pot with S+P SO easy to shred!)
2 RIPE AVOCADOS
1/2 CUP CHOPPED UP GRAPES
1 CUP CHOPPED UP CELERY
1/3 CUP CHOPPED WALNUTS
1/4 CUP CHOPPED GREEN ONION
1/2 GREEN APPLE CHOPPED UP
1/4 CUP CHOPPED CILANTRO
1 LIME juiced
+add paprika, cayenne, garlic, onion to add more flavor or spice (lots of variations!)
1. Chicken needs to be cooked. I put 4 frozen chicken breasts in my crock-pot before I went to sleep with salt + pepper... 8 hours (on low) later I woke up to perfect chicken that fell apart to easily shred! (trick: put cooked chicken breasts in kitchenaid mixer with dough hook and they will be pulverized to perfection!)
2. Your "add-ins" need to be chopped up to your desired sizes. (I like mine crunchy & the fruit adds a nice sweetness!)
3. Put all the ingredients in a bowl and MIX it together except LIME JUICE + AVOCADOS. Add those last to help it all stick together I used a fork that helped smash in the Avocado with everything.
4. Enjoy on sprouted whole grain bread or like me - eat it in a lettuce wrap!
