Whole30 birthday treats!

This past week I celebrated turning 26 in the Outer Banks, NC for a few days with Thomas. It was PERFECT! The weather, the food.. man we love that place. We weren't on the north end per usual -this time we we stayed in Manteo. We love exploring new places and relaxing together!

On another note- it was my goal to MAINTAIN being on the Whole30 diet while down there for my birthday! I am pretty proud of myself for succeeding.. for the most part. ; - ) Here are some of the things I ate & did: 

Breakfast Scramble: eggs, kale, tomatoes, red onion, GUAC and prosciutto! Delish.

Loved having quiet time on the porch in the morning and black COFFEEEEE yes. #coffeeaddict

Lunch: Beef Taco (seasonings, meat & red onions)  Romaine Lettuce Wraps, red peppers, salsa, QUAC & cucumbers ( AKA crunchy "CHIPS" )

Thomas' version... with the REAL chips :-) haha. 

We loved working out everyday that we were there -the gym was in walking distance!

Enjoyed finding secluded, wide open beaches,  highly recommended for soul detoxing & refreshment.

SNACK: homemade Coco-nutty granola, 3 cut up strawberries & a little watered down coconut milk :)

Granola: 1 cup of the following: cashews, pumpkin seeds, slivered almonds, walnuts, handful of rasins, 2 TBS cocoa powder, 1/4 cup coconut oil, 3 cups flaked unsweetened coconut, cinnamon to taste- mix & bake at 250 degrees for 45 minutes or more (depending on how crunchy you want it :) )

Kill Devil Grill was an awesome recommendation for dinner- WORTH the 45 minute wait! 

Birthday dinner: Kill Devil Grill - Seared Halibut + * mashed potatoes + tomato salad + saffron broth

(* there most likely WAS some butter in the mashed potatoes (no other dairy though) + potential white wine in the saffron broth.. but I was okay with it considering I did pretty well.. also thank goodness white potatoes are now WHOLE30! ) This was the most delicious thing ever, 

As for "birthday" treats.. last year I made a watermelon cake.. but this year I found THESE...

Just smashed up dates rolled in ALMONDS. #whole30 birthday treat approved!!

Fro-Yo WITHOUT the Yo... fruit & almond slivers - delicious :-) #whole30problems

So there you have it.. just 5 more days of Whole30. However, I feel so good I intend to eat this way as much as possible! and of course here are more pictures of OBX :-)
